Like harmonizing flavors, sourcing the best produce while being aware of issues like food miles (the distance an ingredient travels from origin to table) is a question of balance. So where possible, we rely on seasonal recipes. And organically grown fruit and vegetables, ethically reared livestock and sustainable fish.
